Is this couple weird? should I run?

If they recorded you without specifically disclosing that or getting your consent, that is so far beyond creepy I can't believe you're still talking to them, honestly.
 
This isn't a polyamory issue, this is a creepy-stalkery employer issue.

I guess I am somewhat torn about what you should do because I don't know if you knew about the camera ahead of time. And even if you did, did you know they were going to extensively review the footage? On the upside, maybe they are just very interested in you and wanted to learn more about you. It just didn't occur to them that maybe they were going about it in an inappropriate way. It definitely doesn't sound like they understand polyamory fully. Have they read the book, Opening Up? It is an outstanding read for anyone who wants to know the basics about poly (and other nonmonogamy). Even just the barest basics, have they read the Poly FAQ? Perhaps introduce them to that, and then see if you're still interested. I definitely see the potential for a unicorn triad here, as long as you are able to get past the creep factor.
