I would echo the cautions about work-relationships but, unless you are in a "superior-underling" scenario I think that can be worked around.
With this woman, or others, I would advise the tactic of being open about being married but only come out with the open/poly if it was going in a "romantic/sexual" direction. i.e. "Coffee? That sounds awesome. My wife said something about going to "x" that night but I don't think she cares if I attend or not." >calls wife< "Hey, honey? That thing tonight, do you need me there? This sexy woman at the office I was telling you about wants to get coffee with me! Thanks, sweets - see you at 9."
Then, later, when she is all "What?! Your wife is OK with you going out with a woman from work?" You reply, "...but of course...she sees her boyfriend every Thursday", or whatever. Like it is a given
